Different types of tea are best enjoyed at different water temperatures, so the Capresso H2O PRO features 11 temperature settings from 110 to 212 degrees F. Whereas a stovetop kettle is handy for reaching the boiling point, which is ideal for black teas, the H2O PRO lets you program precise water temperature for the world of teas from white and green to oolong, black, herbal and rooibos.
The H2O PRO can be programmed to keep water at any temperature from 110 to 190 degrees F for leisurely enjoyment of tea over an extended period of time. A chlorine reducing setting is available to purify water taste. Boiling duration can be programmed for anywhere from 3 to 20 seconds.
The Capresso H2O PRO features a large 56-ounce capacity and a simple, intuitive design. Using the up and down arrows located on the handle, the user selects select the desired temperature. The LCD panel displays the programmed temperature, and illuminated digital controls add to its ease of use. With a press of a button, the kettle begins to heat water and quickly reaches the precise desired temperature. Once the proper temperature is reached, the unit shuts off, indicating that the water is ready.

For green tea that requires a range of different temperatures from 140F to 180F this kettle is "The One".
It's solid and well built; double walled and cool to the touch. Setting is straightforward; each time you set the kettle on the power base it is reset to 212F, so you use your thumb that is anyway holding the handle to left-click down by 10F increments. Fine ergonomics. I do 48 oz at a shot and heating to tea temp is fast. Temperature is accurate. I set it and walk away with confidence that it will heat the water to the desired temperature without needing intervention or supervision, unlike each of the other variable kettles that I've tried.
After many years and many experiments my morning tea preparation is much easier with Capresso H2O Pro. If you're a chajin also trust me - this is The One.

After seeing warnings against another variable temperature kettle (branded by a major tea vendor) that's totally hit-or-miss by 20 degrees, I was cautiously hopeful that Capresso's H2O Pro would avoid that problem.
When this kettle arrived, I decided to play the skeptic and put to test it. Would it really hit 140F on the dot? Just a little above/below? A lot?
After a short brew time, *two* other thermometers (one analog, one digital) agreed with the kettle: 140.0F on the dot!
This is one excellently designed variable-temperature kettle! This kettle has now brought about more casual tea drinking. No more do I have to watch a stove or electric kettle like a hawk and stop it at the right temperature!
Temperatures are programmable in 10F increments from 110F (warm on the wrist) to 212F (boiling). I like to make tea with 140F (a bit over scalding) as I use plenty of Japanese green tea that is temperature-sensitive. And I love how it can also be programmed to keep the same temperature continuously (or not, as you please).
I only have 2 snags with this kettle:
- At the temperatures I like, increments in 5, 2 or 1 degree make better sense than 10 degree increments.
- When taking the kettle off its base, it resets its temperature defaults to 212 (boiling). I'd prefer that it automatically kept my preferences while I'm pouring the occasional cup throughout the day. But that's just me. Turning it to the preferred temp again is just a few thumb-wiggles away (which makes the 10-degree increments a balance of convenience).
Since no other variable-temp kettle I can find on the market is better than this one, these are just would-likes and don't detract from what I feel is a kettle at the head of its market.

I use this everyday but there are 2 things I wish it had - the temperatures only increase/decrease by 10 degrees, I would prefer 5 but this is ok. I really wish a timer or alert would go off when the correct temperature is reached. But I do use it everyday and it heats up water fast.

We bought this kettle to replace an earlier Capresso kettle that had provided years of good service. Don't make the same mistake. Yes it looks good and it boils water but the thermostat is not calibrated correctly and it is not sensitive enough. It sometimes takes up to 40 seconds to switch off after it has boiled even though it is set for the minimum time. This means you either have steamed up walls or you have to watch while it boils and switch of manually. Not impressed
Now three weeks later the whole lid assembley has fallen apart. This kettle is very cheaply made. I am surprised that Jura, one of Switzerlands top companies in this field, is prepared to put their name on such an inferior product.
To bring the tale of woe up to date it is now july 31st and we are looking at our second broken kettle. Capresso replaced the first one with no hassle. The replacement worked fine for ten days until the lid mechanism broke again. This definitely is a "piece of junk"
